After featuring talented local hawkers who closed during covid, Raffles Hotel is turning its attention to the region for its next street food event at Raffles Courtyard.
Happening from 3 July to 8 October 2024, the Regional Hawker Showcase at Raffles Courtyard is a tie-up with local food company Makansutra and its founder, K.F. Seetoh to highlight four renowned food vendors from Southeast Asia.
Each month, a different hawker will showcase their speciality dishes for a week, starting with Pak Buyung Haryanto from Indonesia and his pork martabak from 3 to 9 July.
Hailing from Bandung, Haryanto became famous for serving chocolate martabak at the 2016 San Francisco World Street Food Congress in the Philippines. He later set up Pinky Pork Martabak, a business selling pork martabak that riffs on the traditional crispy bread with beef or chicken.
Haryanto will be at the Regional Hawker Showcase at Raffles Courtyard to make the dish with his own batter. He stuffs it with eggs, coriander, onions, ham, preserved meats, seasoned bacon, and smoked ham, and serves it with the Balinese chilli condiment, sambal matah.
The following month, Ho Thi Tha takes over Raffles Courtyard from 7 to 13 August. Ho sells banh khoai at the Chuon Market Village in Hue, Vietnam. At the destination, people typically purchase fresh produce from vendors and pass them to Ho, who turns them into crispy savoury pancakes topped with pork and seafood.
While diners at the Raffles Hotel hawker event are not able to hand over their preferred protein to Ho, she offers options such as shrimp, squid, fish, and minced pork, and mills rice to make her own batter. Each dish comes with beansprouts, leafy greens, and Vietnamese fish sauce.
Other instalments of the Regional Hawker Showcase at Raffles Courtyard will take place in September and October. More details will be announced later.
This is the second time that Raffles Hotel is putting hawkers in the spotlight. In 2022, the landmark held Hawker Stories at Raffles Courtyard, a series of dining events with Makansutra that championed local street food vendors who closed their businesses because of the pandemic.
