Japanese ramen restaurant Mensho Tokyo launched its first Singapore branch at Raffles City today, 20 July 2024 with locally-inspired dishes like chilli crab ramen.

The chain is known for its house-made whole wheat noodles and ramen creations such as Duck Matcha. Ramen prices here will range between S$26 to S$38.

During this soft launch period, Mensho Tokyo Singapore limits diners to one bowl of ramen each, and only 200 bowls will be available every evening.

Mensho Tokyo was founded in 2005 by chef Tomoharu Shono, who sources ingredients such as whole-grain wheat, shiitake mushrooms, and shoyu from Japanese producers for his dishes. His meat-based ramen are made with a white and creamy chicken soup base called toripaitan, and he tries to balance the dish’s five key elements – soup, sauce, noodles, oil, and toppings – so they do not overpower one another.

The Singapore location is Mensho Tokyo’s 18th outlet worldwide, joining cities such as Bangkok, Melbourne, New Delhi, and San Francisco, where it is recognised by the Michelin Guide. Shono has also won awards including first place at the Shinjuku Ramen Grand Prix and Tokyo Tabelog Top 100.

For Mensho Tokyo Singapore, diners can expect ramen dishes including the Signature Toripaitan (S$38) with A5 Wagyu chashu, duck chashu, and chicken chashu. Garlic Knock Out (S$28) features pork chashu and garlic prepared in five ways: fresh, chips, flakes, roasted, and black garlic oil.

Duck Matcha (S$34) is one of the restaurant’s iconic ramen. The green broth is served with duck chashu and whipped cream, while the Classic Toripaitan (S$26) comes with smoked pork chashu and fermented king oyster mushroom.

Mensho Tokyo Singapore is the only location to have chilli crab ramen (S$32). Soft shell chilli crab is marinated with shio koji and accompanied by kombu, shiitake mushrooms, porcini, chilli crab rempah, baby asparagus, egg foam, and chilli onion.

Side dishes range from vegan fried “chicken” made with king oyster mushrooms and aji fry, or fried horse mackerel with mustard and a tangy sauce. Prices have not been announced.

Besides chilli crab ramen, Mensho Tokyo Singapore is the chain’s only outlet to have desserts. On the menu are items such as a matcha deep-fried bread roll called agepan, houjicha tiramisu, and Zen, a blackened dessert with chocolate, charcoal powder, and black sesame.

For diners planning to visit, go early. The restaurant will only have 200 bowls of ramen available every day. Customers are also limited to one bowl each. Visit the Instagram page for more details.
