Celebrated chef Andre Chiang has teamed up with Singapore restaurant group Surrey Hills Holdings to open a new restaurant here called Bon Broth.
Slated to debut in the fourth quarter of 2024, the restaurant features soups influenced by Western and Asian culinary techniques. The location has not been announced.
Along with Chiang’s new concept, Surrey Hills Holdings is also launching two other brands later this month: Japanese ramen chain Mensho Tokyo and acclaimed modern Spanish restaurant in Melbourne, Movida Original. The group also runs Surrey Hills Grocer.
What to expect from Andre Chiang’s Bon Broth
Bon Broth’s approach combines the French way of making bone stock and Chinese double-boiled soup, which Chiang developed in his Taipei kitchen. According to him, fresh ingredients will be cooked simply to promote “a new balanced and healthy lifestyle.”
While the concept is new, Chiang recently launched a hotpot restaurant in Macau called Broth. The soup base is made from double-boiled bone broth and he does not serve dipping sauces with the meal.
This is Chiang’s latest Singapore venture after his fine-dining French restaurant Andre closed in 2018. The respected chef currently runs the two-Michelin-starred Raw in Taipei and has won accolades like the Lifetime Achievement Award by Asia’s 50 Best Restaurants.
Mensho Tokyo’s first outlet in Singapore
Besides Bon Broth, Surrey Hills Holdings is launching Mensho Tokyo. The ramen chain was founded in 2005 by chef Tomoharu Shono, who has won awards for his dishes including first place at the Shinjuku Ramen Grand Prix and Tokyo Tabelog Top 100.
Shono is known for balancing ramen’s five main elements – soup, sauce, noodles, oil, and toppings. He grinds whole wheat grains to make his own noodles and offers unconventional ramen dishes such as matcha ramen. The Singapore location will serve dishes only available here, including desserts.
Mensho Tokyo will be opening its 18th location at Raffles City (#03-43) on 20 July 2024. The chain has outlets in Bangkok, Melbourne, San Francisco, and New Delhi.
Movida Original’s first standalone restaurant in Singapore
Located next to Mensho Tokyo is Movida Original. Hailing from Melbourne’s iconic Hosier Lane, the restaurant has been credited for starting the city’s obsession with modern Spanish food since its inception in 2003. Led by chef Frank Camorra, his restaurant has been consistently named in the prestigious Australian Good Food Guide.
Certain Movida dishes are already served at Surrey Hills Grocer’s branch at Holland Village, but this is the first standalone restaurant in Singapore. It will open at Raffles City (#03-43) on 27 July 2024.
The Singapore outlet will be headed by chef Adrian Clemmens, the ex-head chef and founding team member of Movida Original. Besides signature items, he will be introducing dishes only served here.
